Rustic Sourdough Pizza with Figs, Truffle Honey, Gorgonzola, and Parma Ham

The first time I tasted the combination of strong blue cheese with truffle honey on warm bread was at a quaint Italian market during the peak of summer. It sent me straight to heaven, and I loved every little morsel of the serving. When thinking about this pizza, my mind immediately returned to that charming Italian market. With figs and the glorious bounty now available in this harvest season, it just made complete sense. 

We opt for a sourdough base, but any quality pizza base will do. You can even ask your favourite local pizza spot for pre-baked bases to freeze them, making your life a lot easier.

INGREDIENTS :

  • 4 Sourdough Pizza bases with a basic fresh tomato sauce thinly spread
  • 2 balls of Fior de latte mozzarella shredded
  • 250 g of good quality gorgonzola cheese roughly crumbled  
  • 8 – 10 fresh purple figs sliced
  • Handful of toasted pine nuts
  • 12 slices of good quality Parma ham
  • Truffle flavoured honey
  • Willowcreek Olive Oil, fresh basil or rocket to garnish 

METHOD:

  1. Warm up your pizza stone, pizza oven or regular oven to at least 220 degrees Celsius
  2. Start by generously topping the pizza bases with mozzarella, gorgonzola and figs
  3. Bake until done for about 4 to 6 minutes, depending on the speed and heat of your oven
  4. Remove when baked and top the pizzas with the pine nuts and Parma ham. drizzle some truffle honey and olive oil over it, and garnish with fresh herbs
  5. Enjoy!
